Smoked Eel Processing

1. Fresh Fish Supply: Natural Anguilla anguilla eels caught from different regions of Turkey are brought to our facility alive. These fish, whose compliance with quality and hygiene standards is ensured with strict controls, are made ready for processing.
2. Resting and Cleaning: Eels, which are considered alive, are rested in special pools in purified water for a few days. This stage helps to remove foreign substances from the fish and increase the quality of its meat. After the resting process, the fish are carefully cleaned and filleted.
3. Salting: Cleaned fillet fish are subjected to a salting process for a certain period of time. The salting process both increases the flavor of the fish and provides longer shelf life.
4. Smoking: Salted eels gain their special flavor by being smoked in natural wood smoke for a certain period of time. During the smoking process, a controlled temperature and smoke density are maintained, so that the product retains its natural aroma and consistency. This process gives a rich flavor that penetrates deeply into the flesh of the fish.
5. Packaging and Storage: After the smoked eels are packaged under hygienic conditions, they are stored under cold chain conditions to maintain food safety and freshness and are made ready to be offered to customers.
